THE CLUBHOUSE MOOROOKA KITCHEN OPERATIONS

EXPRESSION OF INTEREST

The Clubhouse Moorooka is seeking expressions of interest from hospitality operators with a vision for providing quality, affordable and innovative in-house dining options for our members and guests as well as catering options for our functions and events.

ABOUT THE CLUBHOUSE MOOROOKA

The Clubhouse Moorooka is a licensed community sport and recreation club, operated by the Third Place Group Inc, an incorporated not-for-profit organisation, through a lease agreement with Brisbane City Council. We initially opened an outdoor kiosk-bar and the Bean on the Green Café (BOTG) (through a sub-lease agreement) in February 2022 on Fridays, Saturdays and Sundays. We opened the doors to our main bar in May 2022 with build completed in July 2022 thanks to significant support from Brisbane City Council, our generous members and our own funds. BOTG now operates seven days a week and the Clubhouse recently commenced operating on Wednesday nights with a plan to commence operating on Thursdays once an operator is secured. Within twelve months of opening our doors we have more than 1,000 paying members as well as 15 business members and we benefit from support from an amazing array of volunteers. 


Our core demographic is young families however we are extending our reach with special events, such as our recent This is the Magic Mile bands day which attracted over 200 paying ticket holders. The Clubhouse Bistro, with food prepared in our kitchen by a local business, also hosted a successful luncheon for Mothers’ Day catering for 60 adults and 20 children. In addition, we are increasing entertainment options for our patrons.

OUR APPROACH

The Clubhouse operations were informed by a survey of the local community who indicated what they wanted from a local venue. Honouring this, the Clubhouse:

  • An impressive menu of local craft beers  

  • A wine list that offers a broad range of boutique and interesting wines

  • Currently hosts a rotating roster of food trucks that offer a diverse range of affordable and tasty cuisine for all dietary requirements

  • Curates a program of interesting events and celebrations that support local performers

  • Offers spaces for community functions and celebrations

  • Committed to maintaining a unique local space for our community that supports local business

  • Honours the history and era of the club, including maintaining a design aesthetic that aligns with the building and celebrating the club’s history as Brisbane’s biggest bowls club through our fit-out and events

  • Restoring our outdoor spaces to offer increased access to sport and recreation

  • Proudly poker machine free.


Our trading hours are currently:

  • Wednesday 5pm – 9pm

  • Friday – 3pm – 9pm

  • Saturday – 1pm-9pm

  • Sunday 1pm- 7pm

THE BRIEF

We invite proposals from hospitality operators who understand and share our vision and values and can offer our members interesting, quality and reasonably priced meals. We are seeking:

  • Provision of meals every Friday, Saturday and Sunday evening at the minimum

  • Proposals that consider a plan to expand meal access to weekend lunches and dining options on Wednesday and Thursday

  • A menu that considers our diverse clientele, including people of all ages, vegetarians, vegans and people who are gluten-free

  • A provider who can offer affordable catering for parties and events and has the capacity to offer food options for events that attract a larger crowd

  • A menu that is regularly refreshed or includes specials recognising that many of our patrons are regulars who have expressed interest in variety

Proposals must identify strategies to minimise waste and support sustainability. 

ABOUT THE SPACE

  • The Clubhouse and Bean on the Green hold BCC Food Safe Licenses, approved for food prep and baking essentially, due to the restriction of no cooker / fryer.  The Clubhouse acknowledges that the installation of a Range is both necessary and our responsibility as the Primary Lease holders. One alternative could be using a food truck in the loading bay until the future installation of a range is possible

  • We would work together with you on new kitchen set up and design.

  • The kitchen would be shared with Bean on the Green (BOTG) who use the space primarily for baking and food preparation during their operating hours with the addition of 2-3 afternoons midweek - flexible. On occasion BOTG seeks additional kitchen access for special events.

  • Proposed terms of the Hire Agreement with the Clubhouse

  • Plan to reduce waste and support the sustainability of the Clubhouse
